Searching the internet would give you various results on different recipe on how to make Banana cakes or muffins. In my catering business, it is important to have easy to do recipes that will take less time to make. At the same time, it should be delectable that customers will want to keep coming back for more. Although Banana muffins can be quite ordinary in places like the Philippines, I can assure you that this is one of the best banana muffins that I have ever tasted. It is very easy to do and gives wonderful results.
4 cups All Purpose Flour
2 tsp Baking Powder
2 tsp Baking Soda
2 1/2 cup Brown Sugar
1 whole Butter
Sour Cream – 3/4 cup Evaporated Milk (mixed with a little water and 2 tsp Vinegar)
3/4 cup Condensed Sweetened milk (mixed with a little water and 2 tsp Vanilla Extract)
2 cups Mashed ripe Bananas (mix it together with condense milk mixture)
a. Preheat oven at 375 degrees Fahrenheit
b. Combine flour, baking powder, baking soda and sift 3 times
c. Cream butter till fluffy, add brown sugar and eggs one at a time
d. At slow speed, alternately add flour mixture with sour cream milk mixture
e. Add banana/milk mixture and manually mix it well.
f. Put in muffin cups and bake for 25 minutes.
g. Let it cool before serving.
